    Lactic acid is more commonly used than citric acid in confectionery manufacturing due to its mild acidity and slight creaminess, better acidity control, mouthfeel enhancing effect, high temperature stability and healthier nutritional value. These properties make lactic acid more responsive to the needs of confectionery formulations, improving overall flavour and texture.

    Leaving it for too long may result in a change in its properties, but usually without a significant increase in acidity. Lactic acid is usually stable under proper conditions (e.g., sealed, cold, etc.), but if exposed to air or improper storage conditions, the following changes may occur:

    1. Oxidation: Lactic acid may undergo an oxidation reaction with oxygen, leading to the formation of oxidised lactic acid. In this case, there may be a slight increase in acidity.

    2. Microbial contamination: If lactic acid is contaminated by microorganisms, this may lead to an increase in acidity, as the microorganisms can utilise lactic acid as a source of energy and produce more organic acids during metabolism.

    3. Degradation: Lactic acid may decompose at inappropriate temperatures, especially at high temperatures, which may lead to changes in acidity.

    The lactic acid market shows a steady growth trend both globally and domestically. The global lactic acid market is expected to maintain an average annual growth rate of approximately 6% over the next few years, driven primarily by increasing demand for healthy foods and expanding applications of biodegradable materials.
